Instructions

Follow these steps to prepare the perfect Foul Medames with Pita Bread:

Preparing the Fava Beans:

  1. Rinse the Beans: If using dried fava beans, rinse them thoroughly under cold water and soak them overnight in a large bowl with plenty of water. If using canned beans, skip to step 4.
  2. Cook the Beans: Drain the soaked beans and transfer them to a large pot. Cover with fresh water and bring to a boil. Reduce the heat and simmer for 1-2 hours, or until the beans are tender. Drain and set aside.
  3. Sautรฉ the Aromatics: In a separate pan, heat 2 tablespoons of olive oil over medium heat. Add the chopped onion and garlic, and sautรฉ until the onions become translucent.
  4. Add Tomatoes and Spices: Stir in the diced tomato, cumin, coriander, chili powder, salt, and pepper. Cook for an additional 5 minutes, allowing the tomatoes to soften and release their juices.
  5. Combine with Beans: Add the cooked fava beans to the tomato mixture. Stir well to combine all the ingredients.
  6. Mash and Simmer: Using a potato masher or the back of a spoon, gently mash some of the beans to thicken the mixture. Simmer on low heat for 15 minutes, stirring occasionally.
  7. Finish with Fresh Herbs: Remove from heat and stir in the chopped parsley, cilantro, lemon juice, and the remaining olive oil.

Serving the Dish:

  1. Warm the Pita Bread: Preheat your oven to 350ยฐF (175ยฐC) and warm the pita bread for about 5 minutes or until soft and pliable.
  2. Prepare Accompaniments: Arrange the tahini sauce, feta cheese, sliced eggs, and pickled vegetables in small bowls for easy serving.
  3. Plate the Foul Medames: Spoon the Foul Medames onto a large serving platter or individual plates.
